It is not a book for people lacking experience, but you won’t make errors obsessioon you are a novice. The book is very well written and recipes are thoroughly explained. I have made three of the infused ganaches and they have all been superb. Please try again later. I love his burnt caramel ideas.

Jan 25, John rated it really liked it Shelves: Recchiuti has you use invert sugar in almost all of the ganaches, but provides no recipe to make it yourself and it can be hard to find. I’ve only made on recipe from this book, but it’s worth the full price of admission! Would you like traets tell us about a lower price?
